Michel Bras never left the Aubrac plateau in southwestern France, where he grew up and established his restaurant near Laguiole village. A vast high plateau where the sky has no limit, Aubrac is the realm of natural beauty. Maison Bras was designed as an open window to the ever changing lights and colors of Aubrac for the guests to enjoy them as a part of the whole dining experience. “Gargouillou”, the Bras signature dish, was inspired like many others by this exceptional environment. Prepared with over 60 varieties of seasonal flowers, vegetables, seeds and herbs, the dish celebrates the nature and beauty of this magical plateau. Michel tells about his fascination in his own words.

For me, the taming of conquering Aubrac has been a long journey.
The plateau mysterious atmosphere is fixed in my imagination, far from the playmate that it became during my adolescence.
Today, its fascinating aura and tranquility are there everyday to regenerate me. Its complicity has become essential.
Aubrac is a universe on its own, where each one of us can collect images and new offerings every single day, according to our particular reality.
I am surrounded by this natural fortress, by this desert where the sky, the minerals, the vegetation – everything brings me back to the source.
There is no room for amateurs’ extravagances here : the magic of Aubrac only comes to those who give back.
It suffices only to listen, to observe and to breathe :
the depth of silence,
the inebriating light,
the mixed winds from the pastures.
This is clearly a space of intimacy.
Some might say it is useless,
But in search of the absolute, it is the little things that fill me with happiness.
Nourished by Aubrac immutable cycles, I have developed a relationship where each moment is filled with wonder through sounds, colors and scents.
There, all is beautiful and good.
I deeply feel that the Plateau has given me the ability to open myself to the world. And today, I know that Aubrac gives one the access to that which is universal.
Everywhere there is this little corner, this parcel, a wall of dry stone that transports me on a journey through imagination.
