    It's a cutting instrument!

    I purchased a set of these knives a few years ago. As a professional chef, I use these knives every single day.
    They are truly a joy to use, and making more technical cuts, like brunoise, fine julienne, or finely sliced chives or green onions, is almost effortless.
    These knives have also been extremly durable considering the wear and tear they are sometimes subjected to in a cnommercial kitchen.
    I'm still waiting for a more traditional filet/boning knife to be released to the line.
