L'Aligot
Aligot is a traditional dish and the soul food of Aubrac region. Prepared with very simple ingredients - potatoes, garlic and fresh local tomme cheese - this dish is a symbol of Aubrac, a dish that is shared with many at festivals and celebrations.
Michel's mother, Angèle, used to own an inn called Le Mazuc in the village of Laguiole, where his career began in his mother's kitchen. When Michel opened his own restaurant in Le Suquet in 1992, he included aligot in his new original menu as a symbol of his beloved land. And for many years, the preparation of aligot was entrusted to his mother.
