Here are some simple and easy recipes to prepare for the average home kitchen from Michel. No matter how cutting-edge, sophisticated, or complex the recipes are, BRAS cooking never strays from the essentials. The same philosophy is stocked in the recipes that can be quickly shared in the kitchens of relatives and friends.

He showed some of these recipes at an acquaintance's house in Tokyo, together with his brother André. André followed in his father's footsteps and became the technical director of Forge de Laguiole, the company that made Laguiole sommelier knives world famous. Before that, however, he was in the kitchen with Michel, helping his mother with her auberge, and since retiring from Forge de Laguiole, he has been one of Michel's closest partners in the kitchen, assisting Michel and his team with their projects. (Not in the kitchens of Le Suquet or Halle aux Grains.)
